This post-doctoral research is part of the joint scientific research work carried out by the post-doctoral workstation of the natural product company and the post-doctoral mobile station of the School of Food Science and Engineering of Tianjin University of Science and Technology. In the opening report, he elaborated the basic content, expected goal, current situation at home and abroad, scientific significance, academic value, application prospect, technical route, innovation points and proposed key issues of the research, he also accepted questions from an expert group composed of Professor Du Xinjun, Dean of the School of Food Science and Engineering of Tianjin University of Science and Technology, and Zhang Chunli, a senior engineer of a natural product company. After a comprehensive discussion between the instructor and the expert group, Dr. Li Dongnan innovatively introduced high hydrostatic pressure technology into the research of this subject, and used the extreme pressure conditions generated by high hydrostatic pressure to change the hydrogen bond, ionic bond and hydrophobic interaction between anthocyanin-
pectin in fruit juice, the effect of different non-covalent binding forms on the stability of anthocyanins was explored by studying the relationship between the interaction differences of anthocyanins - and the stability of anthocyanins in the same system, and the mechanism of pectin improving the stability of anthocyanins in fruit juice was further clarified, which made it possible to quantitatively adjust the stability of anthocyanins in water-based environment by using endogenous substances in fruits and vegetables, and provided new ideas for improving the stability of active substances in water-based environment; the experimental design of this topic is scientific and reasonable, and the goal is feasible. The existing experimental equipment and facilities of the workstation can meet the experimental needs. Dr. Li Dongnan has the ability to undertake the research of this topic and agrees to enter the station to start the topic.
