According to legend, during the Spring and Autumn Period and the Warring States Period, in order to sacrifice the heroes of the eight righteous men who died in the Battle of Changping, on the Qingming Festival, every family in Shanxi Shangdang got up early to kill pigs, wash water, scald their hooves, and make soup, so that the righteous men could drink early. This move also stipulates the time to taste the pig soup. The boss selling pig soup in Changzhi County has formed a tacit understanding invisibly. They do it early and have to go on sale at 6 o'clock at the latest. Diners also need to get up early to not miss this delicious food. In the early morning, the heat emitted by the pig soup diluted the coolness in the air, and the sound of plates and bowls colliding, shouting, and drinking soup one after another, awakening Changzhi County from its sleep.

Pig soup not only needs to take pig water, but also the meat of pig head and pig trotter, which means that the taste of the whole pig is in one pot from head to toe and from inside to outside. The practice of pig soup is quite exquisite, even with a craftsman spirit. The soup seller uses pork bones to make the original soup, dozens of fresh pork bones, dozens of condiments, put them into the pot, add water, and simmer slowly over a small fire. The fire can neither be too large and consume delicious food, nor too small and time-consuming until a pot of white soup is boiled. Take a clean small bowl, add the stewed pork liver, pork heart, pork intestine and other main ingredients to the bowl, and add a little scallion cake. Pour the thick soup into a small bowl, wait until the soup is in close contact with the dishes in the bowl, fasten the solids in the bowl with a spoon, and then pour the soup back into the pot of pork bones, and repeat this several times until the main ingredients are completely preheated to taste. At this time, the thick soup was added again, a little Shanxi mature vinegar was added, and some chopped green onions were added. A bowl of pig soup was freshly baked.
