In the whole sublimation drying process, the material temperature is controlled below the eutectic point, but the difference is not too much, generally lower than the eutectic point 3~5 ℃, so as to save energy consumption and shorten the freeze-drying time to the greatest extent on the premise of ensuring product quality, avoid problems and defects such as deformation, drying shrinkage, surface bulging, white color, insufficient crisp and delicious taste, loss of active ingredients caused by rapid heating. Drying at low temperature and low pressure also avoids the loss or inactivation of heat-sensitive substances and volatile components. At the same time, low pressure is anoxic and easily oxidized components do not cause oxidative deterioration.
