Don't get me wrong, mango buds are not buds of mango trees, but small mangoes that are not yet ripe. These days, walking on the path of our Yunnan peak factory area, the line of sight will always be involuntarily attracted by the mango trees on the roadside. Mangoes have just grown to the size of a fist, or tender green mango buds, carefully hiding in the leaves. Seeing them, I will think of my favorite taste in childhood.
There is no ripe mango. The taste is sour or sour. However, this is not difficult for us Yunnan people. Mix salt, millet spicy, monosodium glutamate and various seasonings together and mix them into dip water. The fresh mango sprouts just picked are cleaned, dipped in them and bitten them down. With a crunchy sound, the sour, salty, spicy and fragrant taste fills the whole mouth. The smell really makes you unable to stop. Now that I think about it, I can't help drooling!
When I was a child, every season, several older brothers would often take us to pick mango sprouts to eat. Take the prepared dip, pick it now, wash it now, and eat it now. The sun shone through the branches and leaves of the mango tree, and we bit the mango bud while playing and laughing. That kind of sour, salty, spicy, crisp, constitute the most characteristic of Pu'er summer flavor.
Now it's the season when mango sprouts are on the market. I bought them home, dipped them in water, and took a bite. It's still crunchy, sour, salty, spicy and fragrant, but it only brings me the same happiness as other delicacies.
