Rice can be processed into frozen rice, fried rice and popcorn to make sugar for the year. Frozen rice is cooked into rice and put it in the open air at night for a night, then fried and used to cut sugar. Popcorn is mainly popped rice or corn. Frozen rice candy taste soft, fried rice candy hard, popcorn candy fluffy.

My uncle has a popcorn machine, which is rare. He popped all the popcorn in the village. The round drum is like a horizontal jar-shaped iron guy shaking on the stove, heating to produce pressure, rice or corn puffing. When the machine is turned on, there is a "bang" like a firecracker, and the popcorn explodes in the sack. When I was a child, I liked to watch my uncle explode popcorn. The "bang" explosion was as happy as a cannon.

To make rice candy, brown sugar must be used. After boiling the brown sugar into paste to produce viscosity, it is evenly stirred with rice flowers. Then it is poured into a wooden strip box, crushed and flattened with wooden flats, cut into strips in the box, then take out the shelf and cut strips of sugar cakes into slices. If you add some peanuts or sesame seeds to the rice candy, it will be more upscale. After the rice candy is ready, sprinkle some fried rice noodles for preservation and will not stick or spread.

In those days, children were looking forward to the New Year, and one of their hopes was to eat sugar for years. It's just that New Year's candy is like a luxury, and it can't be eaten casually. Only after the New Year's greetings leave, can the remaining sugar in the plate be eaten up. After the Lantern Festival, there are no New Year's greetings, and adults allow their children to eat sugar.

Now, there are pastry shops everywhere on the streets, some selling traditional pastries and some selling pastries. Many people dare not eat more for fear of high sugar content and easy diabetes.
