The name of this dish is "Bai Wang", but don't be fooled by the name. It is not white, but red. Eating it during the Chinese New Year represents a prosperous year. Of course, since you eat it, you will definitely get "fire". Friends who want to try it had better bring their own cold medicine in advance, otherwise the feeling of getting angry is not very good.
Bai Wang's cooking method is difficult to say and easy to say. Before killing pigs, prepare a basin and add salt (salt must be appropriate, this is the key, otherwise this dish is easy to fail). When killing pigs, take about one liter of blood (or depending on the quantity of production), shake it to fully mix the blood with salt, and then put it aside to prevent touching. After the pig is scraped white, washed and ripped, each takes the best lean meat and pork liver, slices it in appropriate amount, then puts it into a pan, adds cold water, cooks it, and then takes out the filtered water. Making Baiwang requires a lot of seasonings. Commonly used are grass and fruit noodles, pepper powder, fennel seed noodles, cabbage root, coriander, dried chili noodles, fried peanuts and sesame seeds. Then came the most critical step: take the pig blood prepared in advance (the blood must not solidify at this time, otherwise the dish will fail), add appropriate amount of water according to the concentration of salt in the blood, put the prepared meat and seasonings into the blood basin in turn, stir evenly, then put three red charcoal, remove the charcoal ash and put it into the basin, wait for about one minute, the blood in the basin will condense into jelly and the dish will be ready. Some people are inexperienced, and the white king made is liquid, which is also a failure, and the taste is far from "jelly.
